Dietary Aide

Location: Park Hills West

Description

 

The candidate will be responsible for:

- Menu planning and recipe development.

- Assistance in purchasing dietary food items according to cycle menu and dietary supplies.

- Directing the storage of incoming food and supplies.

- Reviewing and planning menus to determine type and quantities of food to be prepared. Determines quantity of meats and other foods to defrost.

- Preparing meals according to planned menus and standardized recipes in a sanitary manner to ensure the utmost quality with minimum waste.

- Reviewing menus to identify all foods required for therapeutic diets before preparing foods. Using nutritionally equivalent substitutes when required.

- Preparing foods in advance of cooking day as needed.

- Making substitutions to accommodate residents likes and dislikes. Record menu changes.

- Operating a variety of kitchen utensils and equipment, such as blenders, mixers, grinders and slicers. Bakes, roasts, broils, grills and steams food items to prepare for consumption.

- Washing, peeling, cutting and shredding vegetables and fruits to prepare for use.

- Testing and observing food by smelling and tasting for palatability. Seasoning food for acceptable flavor and texture. Adding gravies, sauces, and garnishes as required.

- Planning cooking schedules to meet designated meal schedules.

- Serving meals according to portion control. Slicing portions of meat for individual servings. Monitoring portion control and food waste.

- Checking plates for accuracy before meal is served.

- Serving meals in dining room in a timely manner utilizing sanitary serving techniques and good service style. Monitoring meal service.

- Storing food in designated areas, utilizing knowledge of temperature requirements, food spoilage, and food sanitation. Covering, labeling and dating all foods correctly.

- Utilizing supplies and equipment properly and without waste.

- Reporting any damaged or unsafe equipment or food items to their supervisor.

- Maintaining dining services according to established rules and regulations, and according to the Health Department and State and Federal Codes.

- Maintaining high standards for department safety.

- Maintaining proper inventory levels to meet menu and department needs.

- Thinking and acting calmly and logically to meet unusual occurrences of the job.

- Sharing ideas with the director for improving department to meet the resident's needs.

- Assisting in coordinating special dinners and functions as requested.

- Working extra hours as needed and approved to meet department needs.

- Attending in-services, seminars, meetings and classes to keep current on new information.

- Performing any and all work assignments that immediate supervisor and facility director designates.

Qualifications

- Knowledge and experience in basic concepts of nutrition for regular and modified diets.

- Ability to adapt recipes to achieve needed yields and consistencies.

- Ability to prepare large quantities of food, maximizing flavor, nutritional components and quality ability to meet established standards and time schedules for meal service.

- Be able to Lift up to 50lbs; maximum with frequent lifting and/or carrying of objects up to 35 lbs.

- Standing, crouching, walking, smelling, tasting, reaching and handling.

- Talking, hearing, depth perception and accommodation of visual focus.

- Work in variable temperature changes with exposure to heat, cold, and wet conditions.

- Daily hazards that include irritating chemicals and soaps, hot equipment, slippery floors, sharp objects and extreme temperature of water.

- Ability to work variable hours including alternating weekends and holidays.

- Interacts in a tactful, diplomatic and kind manner with residents, families, visitors and co-workers to provide a safe, efficient and therapeutically effective caring environment which ensures the self-respect, personal dignity, rights and physical safety of each resident and guest.

- Maintain a dependable attendance record and adheres to standards of cleanliness, grooming, hygiene and dress code.
